Kniddelen


Kniddelen are luxembourg’s most popular dumpling dish, consisting of soft pillowy dumplings with a creamy bacon sauce and fresh herbs!

A sure comfort food and one you will be craving after the first bite.


Ingredients:

  • 250 grams flour
  • 1 tsp salt
  • 2 eggs
  • ½  cup milk
  • 8 grams butter
  • 6 oz bacon, diced
  • 3/4 cup cream
  • Salt & pepper to taste
  • Fresh parsley, chopped
  • Fresh chive, chopped

Directions:

1. In a large bowl, add flour & salt. 
2. Whisk in eggs and milk to create a thick batter, continue whisking until there are no lumps.                                                     3. Cover and rest at room temperature for 30 minutes.
4. Bring a large pot of salted water to a boil.
5. Drop a teaspoon of batter into the water, stirring gently so they don’t stick to the bottom.  Best to do the batter in batches so the pot doesn’t get over crowded.
6. Boil the dumplings until they rise to the surface, and are tender. 
7. Use a slotted spoon to drain and transfer dumplings to a bowl. Repeat cooking dumplings until all batter is done. 
8. In a large pan cook bacon until crispy, then take bacon out and let it drain in a bowl with a paper towel. 
9. In the same pan add butter & cream, let it come to a boil then add bacon back in, season with salt and pepper then bring it down to a simmer and allow the sauce to slightly thicken.
10. Once all the dumplings are cooked add to sauce, stirring everything together. 
11. Sprinkle with parsley and chives!
